To make your winter meal truly memorable, the chefs serve up favourites on the a la carte menu such as macerated tuna tartar, tiger prawn tempura and lobster maki in addition to the much-loved Spanish red shrimp nigiri that is cooked in two temperatures.

The Fuyu menu also features delicacies like the fatty tuna tartar and beef bacon gunkan with quail egg, toro flambé nigiri served with tomato puree, grilled foie nigiri with raspberry and tare sauce, and the signature 99 Wagyu sliders nigiri with foie and shoestring chips.

To finish the culinary experience on a sweet note, there is a lovely chocolate fondant topped with caramel ice-cream and golden leaves, along with a serving of coffee or tea to wash it all down.
